Don't Flood over!

Its a fine line between Puff and over flood. Literally! A fine outline is not enough. Your outline should be thick enough and tall enough to create a border that will keep your fill icing on top of your cookie rather than flowing over the edge. If this happens (and it does!) just wipe the sides with your paper towel, reapply your outline to the part you wiped off, and re-flood with less pressure. You can also outline and flood further away from the edge and use your scribe to push your icing to the desired area. Please note that if you put an over flooded cookie in the dehydrator it will overflow through the rack onto the cookies below.
